Ice cider from the Hautes-Alpes : Apple des Cimes

In the Hautes-Alpes, the star of the show is the apple! And for Apple des Cimes, they are selected exclusively at altitude, over 600 m, to create an exceptional product: Ice Cider.

Yann Des Agostini, who is also a winemaker, produces this rare elixir inspired by Canadian know-how.
Here, the apples don't freeze on the tree: they are pressed, then the juice is frozen at -21°C for three weeks. They are then gently thawed at 8°C, before being fermented and clarified. The result is a genuine sweet apple wine, available in three recipes.
A 35 cl bottle concentrates 4 kg of apples: a real jewel, already adopted by many Michelin-starred chefs... and a real eye-catcher under your Christmas tree!

In the Serre-Ponçon valleys, numerous beekeepers take advantage of the diversity of the environment - from Provencal influences to alpine pastures - to produce a honey that regularly wins awards at the Salon de l'Agriculture.
